Chana Chura (Masala Chana) Spicy roasted black gram or chickpeas with chopped onion, chili, lemon juice, and mustard oil. Alu Bharta Mashed potatoes with mustard oil, onion, garlic, and green chili. Pakhala Chakhna (with dry badi or aloo fry) Sides like dry fried potatoes, badi chura, or saga bhaja served with Pakhala (fermented rice water) — sometimes eaten alongside drinks in villages. Mudi Mixture (Mudhi Bara Chakhna) Puffed rice mixed with onions, chili, peanuts, sev, and mustard oil.
